Hubby cooked this pork ribs recipe last New Year’s eve. It was a simple feast for 2. While it was just him and me at home (and our 2yo bub who doesn’t eat much!); we nearly finished the entire dish. That and with a small serving of pasta on the side. It was a restaurant quality meal! We’re definitely doing this again!

The delicious taste of coffee pork ribs is the hallmark of Singaporean cuisine. This dish has become a favorite of Singaporeans. This scrumptious appetizer is made in a three-step process that involves marinating the pork loin in egg whites, salt and cornstarch. It is then deep-fried and finished with a bittersweet coffee sauce. It makes a great appetizer or side dish for any party.

Ingredients
  

  • 1 kg Pork ribs cut into strips or into bit size (depending on how you want them served)
  • Cooking oil for deep frying

For the white coffee sauce:

  • 2 packets White coffee (We used the Old Town White Coffee brand. Other brands will do.)
  • 3 tbsp Sugar
  • 1 bulb Garlic crushed and chopped
  • 4 tbsp Worcestershire sauce
  • 1 tsp Ground pepper
  • 2 tbsp Soy sauce
  • 2 tbsp Rice or Chinese cooking wine or White wine
  • 100 ml Water

Instructions
 

  • Mix all the marinate ingredients in a bowl.
  • Marinate the pork for at least 2 hours.
  • Fry the pork ribs in a hot oil under medium heat for about 7-10 minutes or until golden brown.
  • Drain oil with a strainer.
  • Set aside.
  • Mix the white coffee sauce ingredients in a bowl.
  • Stir thoroughly.
  • Put in a hot pan and stir until the sauce thickens.
  • Once thick, put the pork ribs in. Make sure to cover the ribs thoroughly.
  • Serve with pasta or a glass of cold beer.

Notes

We prefer using rice flour and tapioca starch because it gives a good, smooth crunch to the meat without the dough-like after-taste effect of the plain flour. While we don't normally use them at home, it's worth buying them just for this recipe so we get the texture that we want for our ribs.
