Broccoli Salad

Broccoli Salad is easy to make, nutritious, and delicious! You can prepare it up to 4 days ahead. The dressing is easy to make and can be kept in the refrigerator for up to 3 days. You can use a variety of toppings, such as bacon, dried cranberries, feta cheese, and pecans. You can also add a dollop of sour cream, which will soften the broccoli.

Ingredients
  

  • 1-2 tsp Sweet shrimp paste (I bought mine from the Asian Market nearest our place.)
  • 1 whole Onions chopped
  • 1-2 whole Tomatoes cut into chunks
  • 1 bunch Broccoli cut into chunks
  • You may also throw in some spinach in the mix if you have some.

Instructions
 

  • Blanch the broccoli for 3-5 minutes.
  • Drain and set aside.
  • Put all the ingredients together in a bowl.
  • Mix well.
  • Cool in the fridge until serving time.
  • Serve with your preferred viand.

Notes

If you prefer, you can also use pre-cooked broccoli. You can simply mix florets of broccoli with red onion, sunflower seeds, dried cranberries, goat cheese, and crumbled bacon. When serving this salad, keep the dressing separate so that it's not too runny. Then, simply assemble and serve the salad. As a bonus, you can make it in advance, so that you can enjoy it whenever you want.
