Stir-fried Amaranth with Asparagus

You may have heard of stir-fried amaranth before, but you haven't tried it yet. It's a healthy and tasty grain that you can easily prepare in the pan of your choice. It has a similar texture and flavor to spinach, but is a little more fibrous and tough. Just like kale, amaranth is loaded with nutrients, and is a good choice for those who are trying to add more green vegetables to their diet. This stir-fried recipe pairs well with aromatic rice and a bowl of hot soup.

Ingredients
  

  • cooking oil
  • amaranth leaves washed
  • asparagus cut in desirable lengths
  • garlic crushed and chopped
  • tomatoes cut in 4 halves
  • shrimps deveined and cut in halves
  • paprika powder optional
  • Maggi seasoning
  • pepper
  • hot water

Instructions
 

  • Put cooking oil in a very hot pan.
  • Saute' the garlic.
  • Add in the shrimps. Stir well.
  • Add the tomatoes.
  • Put the heat to medium-low.
  • Cover the pan to allow the tomatoes to release its juices.
  • Add the asparagus. Mix well.
  • Add the amaranth leaves. Mix well.
  • Add water to prevent the pan from drying out.
  • Season the dish with Maggi seasoning, paprika powder and pepper.

Notes

To avoid over-cooking the vegetables, put the dish unto a plate immediately after cooking. Serve this hot with fried fish or pork.
