Asparagus and Spinach

Asparagus and spinach are a popular side dish for any occasion. This healthy vegetable has a long and interesting history. The ancient Greeks enjoyed eating it during its growing season and the physician Galen wrote about its benefits. The ancient Egyptians had heard of asparagus and it was even pictured on buildings around 3000 BC. Asparagus and spinach are both nutritious and delicious. So, what is the secret to preparing a tasty, easy-to-make side dish?

Ingredients
  

  • asparagus cut in desired lengths
  • spinach washed
  • broccoli florets
  • garlic crushed and chopped
  • fresh chili chopped (optional)
  • cooking oil
  • fish sauce
  • oyster sauce
  • pepper
  • Chinese cooking wine optional
  • hot water

Instructions
 

  • Put cooking oil in a very hot pan
  • Saute' the garlic.
  • When the garlic turns golden, put the asparagus first.
  • If you want your vegetables to be crisp, make sure that the pan is in high heat. You don't want to expose your vegetables too long under fire.
  • Add in the broccoli. Stir well.
  • Lower the heat to medium.
  • Add a little water into the pan to avoid drying up.
  • Add in the spinach. Stir well.
  • Season the dish with fish sauce, oyster sauce and pepper.
  • Add a bit of Chinese cooking wine.
  • When the done, remove the vegetables from the pan to avoid over cooking.
